Six grocery store ingredients give it layers of flavor. It takes about ten minutes and makes two glasses, perfect for sharing or turning an ordinary afternoon into a small occasion.
Ingredients for two glasses
- 1 cup fresh pineapple chunks
- ½ medium cucumber, washed and chopped
- 6 fresh mint leaves, washed
- 2 tablespoons fresh lime juice
- 1 to 2 teaspoons honey, to taste
- 1 cup chilled plain sparkling water
Have ice ready. Reserve a little cucumber, pineapple or mint for garnish if you like.
How to make it
- Blend the pineapple, cucumber, lime juice and 1 teaspoon honey until smooth. If your blender needs help getting started, add a small splash of cold water.
- Add the mint and pulse briefly to release its aroma.
- Pour through a fine sieve into a small jug, pressing gently with a spoon. Taste and stir in the remaining honey if you prefer a sweeter drink.
- Divide the mixture between two glasses filled with ice.
- Top each with ½ cup sparkling water. Stir gently once or twice.
